At the end of these labyrinths of sea water, is the final shallow basin that
holds water that have evaporated to a very dense concentration of salt.
Here the crystal actually "float" on the water. These first pure
crystals are called the "fleur de sel" (the flower of the salt) and are worth
their weight in gold. For the finest table, this special form of salt
adds a touch of refinement that delights the palate.
