Watching Our Salt.

In addition to salt, these marshes are also a major source of fish and eels -- a favorite dish in these parts.  Another favorite product of the salt marsh is the "salicorne" a plant that grows only in very salty soil and that is a delight either fresh or pickled.  Several of us will end our day munching on a tender piece of Vendée swamp grass, a treat that is well worth its salt.
