Jean-Baptiste explains all that to us, and it's a long story. To make it short, after the Hundred Years War, peace reigned for a few years -- no more 'English marauders'. This type of house was built for nobles, but with the idea that peace was here to stay. It's a castle with military elements that are only symbolic, no longer really functional for war.
