Now of all the animals that love rocks, none is greater than the fowl. In legend, it's the gizzard that grinds the stone into flesh. I don't believe all that myself, but I do know that a well prepared gizzard salad is one of the best you can have. Several of our Vendéens have not such thought, but just as many find a new favorite dish for their next menu in France -- this is really good stuff...
