|This variety of squid is especially prized on the best tables of Les Sables. On occasion such fine food makes its way all the way to Paris. But not often -- the best of the catch is available only fresh right here and will be "history" by sunset this evening. I might note that this past weekend an "authentic" fish auction was set up on the quais of the Seine in Paris. In recent summers they set up a "genuine" wheat field on the Champs-Élysées, and also an "authentic" salt marsh, based on a visit like ours this afternoon.. Those poor Parisians are desperate for real culture so they take what they can get...|
